金针菇金针菇又称朴菇、构菌、冬菇、毛柄金钱菇、增智菇、金菇。金针菇脆嫩适口、其味鲜美、增智补脑、延年益寿、营养丰富、鲜香可口。每百克干菇含粗蛋白31.23克,粗脂肪5.78克,可溶性非氮化合物52.07克,粗纤维3.34克,灰分7.58克。它含有18种氨基酸,每百克干重中含氨基酸总量20.9克,其中人体必需氨基酸占总量的44.5%,高于一般菇类。而赖氨酸和精氨酸含量分别为1.024克和1.23克,也高于一般菇类。
