通过核磁共振氢谱研究了二氢杨梅素(DMY)与引发剂混合加热后DMY分子中羟基的变化,从DMY的结构入手对其抗氧化机理进行了分析。结果表明,DMY的抗氧化活性中心在其分子中B环的3个相邻的羟基上,初步揭示了DMY抗氧化机理。
The change of hydroxyl groups in DMY after heated with dihydromyricetin (DMY) and initiator was studied by 1H NMR. The antioxidant mechanism of DMY was analyzed from the structure of DMY. The results showed that the antioxygenation activity of DMY revealed the antioxidant mechanism of DMY on the three adjacent hydroxyl groups of B ring in its molecule.
