目的动态监测湖北省省管单位餐具卫生消毒状况。方法使用国家标准检验方法和卫生标准对武汉市城区2003~2007年省管单位餐具抽检样品进行微生物检验,对结果进行统计学分析。结果共检测样品9108件,合格7824件,总合格率为85.90%;各年度间合格率有显著性差异(χ2=57.19,P<0.01);不同规格餐具的合格率有显著性差异(χ2=83.0,P<0.01);不同类型的单位餐具消毒效果有显著性差异(χ2=426.29,P<0.01)。结论各年度餐具消毒合格率、不同规格餐具的消毒效果和不同类型餐饮业的餐具污染程度有所不同,应进一步加强对省管单位餐具消毒工作的卫生监管力度。
Objective To dynamically monitor the hygiene and disinfection status of utensils in Hubei Province. Methods The national standard test methods and health standards were used to test the samples of sampling units of provincial control units from 2003 to 2007 in Wuhan City. The results were statistically analyzed. Results A total of 9108 samples were tested and 7824 were qualified, with a total pass rate of 85.90%. There was a significant difference in pass rates between years (χ2 = 57.19, P <0.01). There were significant differences in pass rates between different specifications (χ2 = 83.0, P <0.01). The disinfection effects of different types of table wares were significantly different (χ2 = 426.29, P <0.01). Conclusion Tableware disinfection pass rate of the year, the different specifications of tableware disinfection efficiency and different types of catering industry tableware pollution levels are different, should be further strengthened on the provincial units of tableware disinfection of health supervision efforts.
