目的了解贵州省餐饮服务行业的食品安全隐患,为风险监管提供科学依据。方法对2013—2015年贵州省9个市(州)餐馆所用的火锅底料进行抽检,对3年来火锅底料的监测结果进行分析。结果 3年共抽检635个批次,合格率为98.6%。其中2013年火锅底料共抽检101批,合格率为100%;2014年火锅底料共抽检217批,合格211批,合格率为97.2%;2015年火锅底料共抽检317批,合格314批,合格率为99.1%。结论贵州省餐饮业火锅底料中非法添加非食用物质的问题依然存在,贵州省现阶段应提高餐饮服务行业人员的食品安全意识,监管部门应制定相关法律法规和检验检测标准。
Objective To understand the hidden dangers of food safety in the catering service industry in Guizhou Province and provide a scientific basis for risk supervision. Methods Samples of hotpot materials used in nine cities (prefectures) in 2013-2015 in Guizhou Province were sampled and analyzed. The results of the monitoring of hot pot materials at three years were analyzed. Results 3 years a total of 635 batches sampling, with a pass rate of 98.6%. Among them, a total of 101 batches of pot materials were sampled in 2013 with a pass rate of 100%. In 2014, a total of 217 batches of pot pot materials were sampled, of which 211 batches were qualified, with a pass rate of 97.2%. In 2015, 317 batch batches were sampled and 314 , Pass rate of 99.1%. Conclusion The problem of illegally adding non-edible substances to the hot pot foodstuffs in Guizhou Province still exists. At this stage in Guizhou Province, food safety awareness of food and beverage service personnel should be raised. Relevant laws, regulations and testing standards should be formulated by the regulatory authorities.
