[Objective] To optimize the microwave-assisted extraction process for red pigment from Rosa rugosa Thunb.[Method] Using Yunnan edible rose as materials,the extraction conditions of red pigment were optimized by orthogonal test based on single factor test.[Result] The optimum extraction conditions were:microwave power of 560 W,extraction duration of 35 s,solid to liquid ratio of 1∶5 and extraction solvent of 40% ethanol.Under the optimal conditions,the extraction rate of red pigment reached as high as 81.6% and yield reached 3.6%.[Conclusion] Microwave-assisted extraction technology was favorable for the extracting of red pigment from Rosa rugosa Thunb.
