目的了解滨州市2014年食品中铅、镉、总汞、总砷元素污染情况。方法采集滨州市的农贸市场和食品商店等环节的5个品种160件样品用国标法进行了元素含量的检测,按GB 2762-2012《食品中污染物限量》进行评价。结果 160份产品合格率为92.5%,有12份元素含量超过了国家限量,超标率为7.5%,分别为50份蔬菜产品中有6份产品元素含量超过国家标准,包括5份汞元素超标和1份镉元素超标;50份水果样品中有1份油桃铅元素超标;20份小麦粉中有1份铅超标;20份大米中有1份铅和1份镉超标;20份鲜冻水产品中有2份镉元素超标。结论滨州市居民食品中重金属污染的问题较低,但应加强蔬菜、谷物及其制品以及水产品等食品重金属污染的检测和监管,降低食品重金属污染的健康风险。
Objective To understand the pollution of lead, cadmium, total mercury and total arsenic in food in Binzhou in 2014. Methods A total of 160 samples from 5 varieties including farmers’ markets and food stores in Binzhou were collected for the determination of elemental content by GB method and evaluated according to GB 2762-2012 “Limit of Contaminants in Food”. Results The passing rate of 160 products was 92.5%. The content of 12 elements exceeded the national limit, the exceeding standard rate was 7.5%, and the contents of 6 elements in 50 vegetable products exceeded the national standards, including 5 elements exceeding the standard 1 cadmium exceeded the standards; 1 of 50 fruit samples exceeded the standard of lead; 1 of 20 wheat flour exceeded the standard; 1 lead and 1 cadmium of 20 rice exceeded the standard; 20 fresh frozen aquatic products There are 2 cadmium exceeded. Conclusion The problem of heavy metal pollution in food of Binzhou residents is low, but the detection and supervision of heavy metal pollution in vegetables, cereals and their products, aquatic products and other foods should be strengthened to reduce the health risks of heavy metal pollution in foodstuffs.
