Preface The nutritional status of a group or community can be assessed through dietary surveys, clinical and biochemical tests. In the past 15 years, the United States has conducted a large number of nutrition surveys, of which large-scale nationwide surveys have been conducted three or four times. Twice began in the late 1960s and finally in the early 1970s. The other one was conducted between 1971 and 1974, and the survey that corresponds to the current study is currently under way. This article is limited to articles spoke only summary of the main results of the three national surveys described above and for a concise discussion. Finally, we compared the data from the small-scale survey conducted since 1975 to observe possible changes in nutritional status.
