通过pH示差法和高效液相色谱双质谱连用(UPLC-MS-MS)检测茶多酚消毒剂中花青素总量和花青素种类,选择花青素标准品探索其在茶多酚消毒过程中对水体色度的影响。研究表明:茶多酚中花青素总含量仅为0.011%;其中花青素大多数以不稳定的色苷形式存在,研究所用茶多酚消毒剂中六种花青素分别为飞燕草-3-半乳糖苷、矢车菊-3-半乳糖苷、矢车菊、天竺葵-3-芸香糖苷、飞燕草-3-葡萄糖苷、矢车菊-3-6-丙二酰葡萄糖苷;花青素使水体产生的色度值占茶多酚产生色度值的14.3%,对茶多酚消毒剂产生的色度有较大影响;可以利用花青素的不稳定性去除部分茶多酚作为消毒剂对饮用水色度的影响。
