目的了解深圳市劳务工膳食结构及营养状况,为深圳市劳务工平衡膳食、合理营养提供科学依据。方法采用分层随机抽样方法抽取工业区集体食堂14所、830名劳务工进行膳食调查;采用称重法、3 d 24 h膳食回顾相结合的调查方法获取膳食信息,依据中国营养学会2000年修订的《中国居民膳食营养素参考摄入量》标准(DRIs)进行评价。结果被调查劳务工米及米制品摄入量为377.29 g/d,远高于当地常住人口的214.80 g/d的摄入量;劳务工奶及奶制品、水果和鱼虾类摄入量分别为23.22、39.34和17.38 g/d,远低于常住人口的摄入量;劳务工能量、蛋白质和脂肪摄入量分别为10 736.14 kJ、75.80和73.30 g/d;维生素C摄入量为85.90 mg/d,占推荐膳食供给量(recommended nutrient intakes,RNI)的44.2%;钙为418 mg/d,占RNI的51.9%。动物性食物提供的蛋白质比例,劳务工为33.30%,低于常住人口的58.00%。结论不均衡的膳食结构是深圳市劳务工膳食结构的主要特点,建议适当地增加水果、蛋类、奶及奶制品和鱼虾类等食物的消费。
Objective To understand the dietary structure and nutritional status of laborers in Shenzhen and provide a scientific basis for a balanced diet and reasonable nutrition for labor laborers in Shenzhen. Methods A stratified random sampling method was used to extract the food information from 14 collective canteens in the industrial zone and 830 laborers for the dietary survey. The dietary information was obtained by the weighing method and the 3 d 24 h dietary review. According to the revised edition of the Chinese Nutrition Society in 2000 Of the “Chinese residents dietary nutrient reference intake” criteria (DRIs) were evaluated. Results The labor intake of rice and rice products was 377.29 g / d, far higher than the 214.80 g / d of resident population. The labor intake of labor and milk products, fruits and fish and shrimp were respectively 23.22,39.34 and 17.38 g / d respectively, much lower than those of the resident population. The labors’ energy, protein and fat intake were 10 736.14 kJ, 75.80 and 73.30 g / d, respectively. The intake of vitamin C was 85.90 mg / d, accounting for 44.2% of recommended nutrient intakes (RNI); and calcium, 418 mg / d, accounting for 51.9% of RNI. The proportion of protein provided by animal food, labor was 33.30%, lower than the resident population of 58.00%. Conclusion The unbalanced diet structure is the main characteristic of Shenzhen labors’ dietary structure. It is suggested that the consumption of fruits, eggs, milk, dairy products and fish and shrimp be increased appropriately.
