试验选用当年新收获的稻谷,其水分为12.7%、13.9%和15.1%,在23℃和33℃的恒温室中,将7种不同浓度的CO2气体经减压调湿后通入粮堆。定期取样,测定稻谷的脂肪酸、水溶酸、还原糖、非还原糖、粘度、过氧化物酶和发芽率的变化。试验结果表明,CO2对15.1%水分的稻谷在33℃下储藏的脂肪酸、水溶酸的变化有影响。在本试验中三种水分的稻谷在CO2浓度98%以上,在两种温度下储藏都能够延缓过氧化物酶活性的降低。这些结果说明,CO2对稻谷有一定的保质作用。但对稻谷的还原糖、非还原糖、布拉班德粘度最高值和发芽率没有明显的影响。
The newly harvested paddy was selected for the experiment with moisture content of 12.7%, 13.9% and 15.1%. Seven different concentrations of CO2 gas were dehumidified under reduced pressure in a constant temperature room of 23 ° C and 33 ° C After the access to the food pile. In this experiment, rice with three kinds of moisture had CO2 concentration above 98%, and storage at both temperatures delayed the decrease of peroxidase activity. These results indicate that CO2 has certain shelf-life effect on rice. However, there was no obvious effect on the reducing sugars, non-reducing sugars, maximum Brabender viscosity and germination rate.
