用 Ca Cl2 溶液对采后金针菇子实体进行真空浸渗处理 .结果表明 :0 .0 0 5、0 .0 1、0 .0 3、0 .0 6、0 .0 9mol· L-1的 Ca Cl2 处理能明显抑制金针菇采后呼吸和 C2 H4 释放 ,显著减少金针菇采后可溶性固形物、蛋白质、还原糖、淀粉、有机酸、维生素 C、粗纤维等含量的损耗 ,显著抑制金针菇采后细胞膜透性的增加 ,提高采后贮存品质 ,其中尤以 0 .0 1、0 .0 3、0 .0 6 mol· L-1Ca Cl2 处理效果最好 ;0 .12、0 .15mol· L-1Ca Cl2 处理对金针菇采后生理生化变化的影响与对照差异不显著 ;0 .0 0 5mol· L-1的 Ca抑制剂 EGTA处理能显著刺激金针菇采后生理生化变化进程
