食用菌,就是能够食用的大型真菌,包括平菇、金针菇、双孢菇、木耳、银耳、猴头、灵芝等几十个种类。在过去一直被视为进贡皇帝的山珍,随着科学技术的发展和普及,现在已作为一种“保健型”蔬菜进入千家万户。食用菌营养丰富,味道鲜美,可与肉、蛋奶相媲美,而且具有防病治病的作用,常被作为食疗和制药的原料。因此,市场前景非常广阔,种植者也越来越多。
