目的分析滨州市2015年度食品安全监督抽验中发现的不合格样品概况,以利于对滨州食品安全质量进行有效监督。方法汇总2015年食品监督抽检数据,对抽验的不合格样品进行统计分析。不合格样品的市场环节分布及不合格项目依据百分比进行计算,不合格率之间的比较采用卡方检验。结果全年共抽验食品1 084批次,其中92批次不合格,不合格率为8.49%。从市场各个环节来看,不合格率最高的是餐饮服务环节(10.36%),其次为流通环节(5.90%),生产环节最低(3.91%)。其中,生产环节和餐饮服务环节不合格率之间的差异有统计学意义(P<0.05)。从不合格项目来看,不合格项目数量最多的为微生物(49.04%)和化学物质(38.46%)。结论政府应加强对餐饮服务环节中微生物与化学物质的检测,确保市民食品安全。
Objective To analyze the profile of unqualified samples found during the 2015 food safety supervision and sampling in Binzhou, in order to effectively monitor the food safety quality in Binzhou. Methods A total of 2015 food supervision sampling data were collected, and the unqualified samples of sampling were analyzed statistically. The unqualified market share of the sample and unqualified items were calculated according to percentage, and the unqualified rate was compared by chi-square test. Results A total of 1 084 batches of food were sampled during the year, of which 92 were unqualified and the unqualified rate was 8.49%. From all aspects of the market, the highest failure rate is the catering service (10.36%), followed by the circulation (5.90%) and the lowest (3.91%). Among them, there was a statistically significant difference in the failure rate between the production process and the catering service (P <0.05). According to the unqualified items, the largest number of unqualified items were microorganisms (49.04%) and chemicals (38.46%). Conclusion The government should strengthen the testing of microorganisms and chemical substances in the catering service and ensure the food safety of citizens.
