(1) 食物的构成:最近的研究证明,高脂肪低纤维饮食对大肠癌和乳腺癌的发生起到促进作用。因高脂肪可以增加肠内厌氧菌的繁殖而产生致癌物质,低纤维饮食延长粪便在肠内的停留时间,因而加强致癌物质与肠壁的接触而发生癌肿。膳食中缺乏维生素A和C也是一个重要因素。因维生素A有增强上皮细胞的抵抗力,阻止细胞的癌变作用;维生素C可阻断体内亚硝胺的形成,抑制癌细胞的繁殖能力。维生素C还能促进细胞间质致癌,阻挡癌的生成,并能对晚期癌的发展起到缓解作用。
