烹饪早已成为一种社会现象。而人类丰富多彩的社会生活,又促使烹饪为适应各种复杂的社会需求形成各自的侧重特点,造成烹饪按其社会功能划分的四大类别,这就是饮宴烹饪、社团烹饪、餐旅烹饪和家庭烹饪。由于它们的任务侧重点不同,表现特征也各异,研究的重点当然也不一样。冷静地承认烹饪按社会功能分为四大类,会积极地引导更多的有识之士将自己的研究力量及时转移到当前更需要投入力量的社团烹饪和家庭烹饪研究上来。
Cooking has long been a social phenomenon. The rich and colorful social life of mankind also urges cooking to form its own emphasis characteristics in order to meet the needs of various complicated societies, resulting in four major categories of cooking according to their social functions. These are banquet cooking, community cooking, dining and culinary cooking and Home cooking. Due to their different mandates, the performance characteristics are also different, of course, the focus of the study is not the same. Calmly admitting that cooking is divided into four major categories according to social functions, it will actively guide more people of insight to shift their research efforts to community cooking and home cooking research, which are more needed now.
