[目的]了解北京市顺义区餐饮业食源性致病菌污染状况。[方法]采集辖区内奥运会及奥运会测试赛中定点宾馆饭店等大中型餐饮单位的样品,以无菌方式采集易造成细菌性食物中毒的高危食品。[结果]947件样品进行金黄色葡萄球菌检测,检出率为2.1%;862件样品进行单增李斯特菌检测,检出率为0.4%。[结论]凉拌菜、炝拌菜、沙拉、熟肉制品、冷加工糕点面包中的金黄色葡萄球菌、单增李斯特菌污染是目前存在的主要问题,是今后日常监测和卫生监督的重点。
[Objective] To understand the pollution status of food-borne pathogens in Shunyi District, Beijing. [Methods] Samples of large and medium-sized catering units such as fixed-point hotels and restaurants in the Olympic Games and the Olympic Games test were collected. Aseptically collected high-risk foods that could cause bacterial food poisoning. [Results] 947 samples were tested for Staphylococcus aureus, the detection rate was 2.1%. 862 samples were tested for Listeria monocytogenes, the detection rate was 0.4%. [Conclusion] Staphylococcus aureus and Listeria monocytogenes contamination in salad dressing, salad dressing, salad, cooked meat product and cold-processed pastry bread are the main problems currently and are the focus of daily monitoring and health supervision in the future.
