微波技术开始于1897年瑞理关于空心管中传播电磁波的理论工作,1938年维利安兄弟制出了第一只速调管,40年英国人制成了多腔磁控管,以后发展很快。目前微波技术已很成熟,广泛的用于工业、农业、天文、军事、科学、医疗等领域。而微波能用于食品加热是由Percy Shencer在1945年提出的,这促进了微波能用于工农业加热和第一个微波炉的发展。这以后应用不断的扩大,1964年在美国弗罗里达召开了第一个独立的微波能应用会议。1966年在阿伯特大学成立了国际微波能协会(IMPI),并定期出版刊物专门介绍这方面的进展和应用情况。
