黄曲霉毒素是一种强致癌物质,据国家癌症攻关专家组最近报导,它是致肝癌的主要可能病因,学者们认为有些地方人们肝癌发病率高与该地区粮油食品、饲料被黄曲霉毒素污染有关。 稻米是我国人民习惯的主食,也是食品、饲料工业的重要原料,据调查稻米中黄曲霉毒素污染程度,受年景影响极大。如在江、浙、沪一带,1979年早稻米中黄曲霉毒素检出率低,而1980年检出率较高。近年来,随着人民生活水平的提高,人们对粮食品质和卫生质量的要求也越来越高,为了从根本上预防黄曲霉素的污染,几年来我们对早稻谷污染黄曲霉毒素的规律,进行了系统研究 Aflatoxin is a strong carcinogen.
