用等离子体发射光谱仪分析测定了49个水稻品种(其中有45个黑稻品系、4个白米品种)的糙米和12个水稻品种的精米中铁(Fe)、锌(Zn)、钙(Ca)、硒(Se)四种矿质原素的含量。给果表明:45个黑稻品系的Fe、Zn、Ca、Se四种矿质元素的含量变幅分别为3.6~75.71、15.24~95.27、83.37~407.08、0.0187~0.0851(μg/g),品系间四种元素的含量差异很大;除Se的含量白米显著高于黑米外,Fe、Zn、Ca的平均含量白米和黑米间无显著差异;糙米中四种矿质元素的含量高于相应的精米;稻米中Zn和Ca的含量有极显著的正相关关系。
