芽菜是指利用植物种子或营养器官,培育出的可供食用的幼苗、幼茎、芽球或幼梢。芽菜在我国有着悠久的栽培历史,如绿豆芽、黄豆芽、竹笋、石刁柏菜(芦笋)早已是妇孺皆知的佳肴;而在90年代初开发出来的系列新芽菜,则成为我国菜篮子工程中一个崭新的话题。芽菜生产周期短,技术容易,投资少,风险小,见效快,规模可大可小,产品无污染。目前我国已有很多大中城市进行生产,而且品种还在不断丰富。
