目的: 了解市售七种谷类为主的代乳品的营养成分含量。方法: 水分采用重量法, 蛋白质用凯氏微量定氮法,碳水化合物用氧化法,钙用滴定法, 磷、铁用比色法。结果:蛋白质含量仅为卫生部部颁代乳品标准低限值的34~60% 左右,脂肪含量为部颁标准低限值的10~20% , 碳水化合物、水分含量高于部颁标准高限值, 钙、磷、铁含量不同程度的偏低。结论: 市售七种谷类为主的代乳品不能作为代乳品, 只能作婴儿辅食, 否则会造成蛋白质-热能营养不良, 危害儿童体格、智力发育
Objective: To understand the nutritional content of seven types of cereal-based milk substitutes on the market. Methods: Gravimetric method was used for determination of water content, Kjeldahl method for protein determination, oxidation method for carbohydrate, titration method for calcium, phosphorus and iron. Results: The protein content was only 34-60% of the lowest standard value of the Ministry of Health, and the fat content was 10-20% of the ministerial standard lower limit. The carbohydrate and water content were higher than the standard high limit Value, calcium, phosphorus, iron content of varying degrees of low. Conclusion: The seven commercial cereal-based milk substitutes can not be used as milk substitutes, but only can be used as infant food supplement. Otherwise, protein-heat malnutrition will be caused, endanger the physique and mental development of children
