Gelatin is one of the typical colloid chemistries in colloidal chemistry. It is a hydrolyzate of collagen in biochemistry and a polymer of natural polypeptides in macromolecular chemistry. Although gelatin is not one of the most noticeable proteins from the biochemical point of view, gelatin is widely used as a representative of protein colloids in colloid chemistry due to its ease of preparation and its stable properties. Freundlich’s classic book, Kapillar Chemie, shows that early studies of gelatin sols and gels constituted a very important part of colloidal chemistry. In the field of modern colloidal science, gelatin research has been mentioned on the molecular structure level due to the development of molecular structure theory, x-ray diffraction, electron microscopy, and the application of modern experimental techniques such as infrared spectroscopy. As a protein lyophilic colloid, its scope and wide range of studies
