An educational research project funded by the Danish State aimed at developing human resources through doctoral education is carried out and implemented at universities in Tanzania, Uganda and Denmark. The project aims to produce beef and mutton products of higher market value by making full use of local feed resources so as to increase the efficiency of livestock production and increase the incomes of farmers. In both countries, the middle class and the traveling population are growing, and the quality of meat they require is superior to the quality of the meat produced on local livestock farms. At present, the meat products with the largest market profitability are still totally dependent on imports. As a result, the livestock husbandry has not only failed to generate revenue for local farmers and herdsmen, but has also caused a loss of foreign exchange.
