余在担任江苏烹饪研究所职事的前后,先期写过《扬州饮食回想录》的文章,分期连载在《中国烹饪研究》季刊上。后来又撰《海外饮食畅想录》,分期连载于《美食》杂志,洋洋洒洒十余万言,竟然而生知不足的感叹。因是奋笔而书《海内饮食回想录》,以此为余热之作,回报商专和商院两届党委的厚爱,以及十年读者对余的期望。 此篇所谓“海内”者,即是我中华960万平方公里,31个省、市、自治区之谓也。余虽受经历所限,未能足迹全国,然而却已到浙江、江西、福建、广东、上海、安徽、山东、山西、陕西、河南、
