目的:通过膳食营养素摄入调查及血液、唾液样本抗氧化指标检测,探讨饮食抗氧化营养素摄入和机体抗氧化水平与牙周病发生、发展及氧化应激与牙周病的关系。方法:随机选择50例中重度牙周病患者及50例牙周组织正常者进行膳食频率和72 h膳食回顾调查,并收集其血液和唾液样本,采用液相色谱与质谱联用技术检测其中营养素及抗氧化相关指标,采用SPSS19.0软件包对数据进行配对t检验。结果:膳食频率调查显示,牙周病组的薯类、水(海)产品、鲜奶、大豆类、新鲜蔬菜、新鲜水果及维生素类膳食补充剂的摄入量显著低于正常对照组(P<0.05);72 h膳食回顾调查显示,牙周病组的维生素A、B2、C、E,钙、镁、铜、硒的摄入量均显著低于正常对照组(P<0.05);样本检测结果显示,牙周病组血液及唾液超氧化物歧化酶水平显著低于正常对照组(P<0.05);牙周病组唾液镁、钙、锰及锌水平显著低于正常对照组(P<0.05)。结论:牙周病的发生、发展与氧化应激相关,膳食抗氧化营养素对牙周组织具有保护作用。
OBJECTIVE: To investigate the relationship between dietary antioxidants intake and body antioxidant status, occurrence and development of periodontal disease, oxidative stress and periodontal disease through the investigation of dietary nutrient intake and anti-oxidative indexes in blood and saliva samples. Methods: 50 cases of moderate and severe periodontal disease and 50 cases of normal periodontal disease were randomly selected to investigate dietary frequency and 72-hour dietary recalls. Blood samples and saliva samples were collected. Liquid chromatography-mass spectrometry (LC-MS / MS) And antioxidant-related indicators, the data using SPSS19.0 package paired t test. Results: The dietary frequency survey showed that the intake of dietary supplements of potato, water (sea) products, milk, soybeans, fresh vegetables, fresh fruits and vitamins in periodontal disease group was significantly lower than that of the normal control group <0.05). The 72-h dietary review showed that the intakes of vitamin A, B2, C, E, calcium, magnesium, copper and selenium in periodontal disease group were significantly lower than those in normal control group (P <0.05) The levels of salivary superoxide dismutase in periodontal disease group were significantly lower than those in normal control group (P <0.05). The levels of saliva magnesium, calcium, manganese and zinc in periodontal disease group were significantly lower than those in normal control group (P <0.05). Conclusion: The occurrence and development of periodontal disease are related to oxidative stress. Dietary antioxidant nutrients have a protective effect on periodontal tissues.
