目的全面了解北辰区市场销售非发酵豆制品微生物污染的卫生状况。方法依据国家标准GB/T4789-2003,对186份非发酵豆制品进行相关检测。结果按照国家标准GB2711-2003《非发酵性豆制品及面筋卫生标准》进行判定,2012年全区市场销售非发酵豆制品的总体合格率为42.6%。其中,大型超市合格率为62.7%,农贸市场合格率仅为29.25%,大大低于大型超市。结论应进一步加强对农贸市场销售非发酵豆制品的监管力度。
Objective To comprehensively understand the health status of Beichen District in marketing of non-fermented soybean products for microbial contamination. Methods Based on the national standard GB / T4789-2003, 186 non-fermented soy products were tested. Results According to the national standard GB2711-2003 “non-fermented soybean and gluten health standards” to determine the 2012 whole region market non-fermented soybean products overall pass rate of 42.6%. Among them, the supermarkets pass rate of 62.7%, farmers market pass rate of only 29.25%, much lower than the large supermarkets. Conclusion It is necessary to further strengthen the supervision on the sale of non-fermented soybean products in the farmer’s market.
