软枣猕猴桃(Aclinidia arguta Planch.)是我国猕猴桃属的一个种。东北三省分布量很大,吉林省年产量1000万kg以上。其果实营养丰富、维生素C含量高,具有浓郁的果香、独特的风味和翠绿色泽。但果实采收后很快变软,不耐贮运,影响了它的发展速度。为了开发利用这一果品资源,从60年代初开始研制软枣猕猴桃系列产品的加工工艺。先后试制了糖水软枣、软枣汁、软枣糖和软枣酱等。现将软枣猕猴桃酱的制作方法报告如下。
Aculinidia arguta Planch. Is a species of Actinidia in China. Large amount of distribution in the three northeastern provinces, Jilin Province, more than 10 million kg annual output. Its fruit is rich in nutrients, high in vitamin C content, rich in fruity, unique flavor and green color. However, the fruit quickly softened after harvest, intolerance storage and transportation, affecting its speed of development. In order to develop and utilize this fruit resources, from the early 60s began to develop soft jujube kiwifruit products processing. Has trial of soft sugar, jujube juice, soft dates and soft dates and so on. Now jujube kiwi sauce production methods are reported as follows.
