高压静电场处理果实贮藏试验,国内外有所报道,但资料不多。其处理果实防腐保鲜的原理,主要认为是电场使空气离子化,空气中产生臭氧(O_3),具有杀菌作用,负离子使酶钝化,降低果实呼吸作用,延长其贮藏寿命。亦有认为气体离子化,保持了果实细胞的膨压,从而使果实长期保持新鲜状态。本试验用高压交、直流静电场对锦橙进行处理后贮藏,并测定其化学性质,进一步探索了电场处理果实防腐保鲜的原理。
High voltage electrostatic field treatment of fruit storage test, have been reported at home and abroad, but little information. The principle of preservative preservation of fruits is that the electric field ionizes the air and produces ozone (O 3) in the air, which has the bactericidal effect. The negative ions make the enzyme passivated, reducing the respiration of fruit and prolonging the storage life of the fruit. It is also believed that the gas ionization, maintaining the turgor of the fruit cells, so that the fruit to maintain a long-term fresh state. In this experiment, the high-voltage AC and DC electrostatic fields were used to treat and store the Jincheng orange, and the chemical properties of the Jincheng orange were determined. The principle of preserving fresh fruits by electric field was further explored.
