根芹菜,又名根洋芹、球根塘蒿,二年生草本植物,以嫩叶与肥大的球状肉质根供食用。有芹菜的香味,可凉拌、炒食、煮食或做汤菜香料。据测定,根芹菜每100克含蛋白质1.5克、脂肪0.3克、维生素B_10.05毫克、B_20.06毫克,加之耐贮藏,风味佳,是一种值得推广的特色蔬菜。1.育苗根芹菜在1~2月份育苗。播种前,用20~30℃的温水浸种12小时,后装入布袋,置冷凉处催芽,期间保持种子湿润并每天抖动种子以利通气。
