目的了解杭州市托幼机构食堂食品安全状况。方法各区县抽取不少于20家托幼机构食堂,由经过统一培训的卫生监督员通过现场查看及与食堂管理人员面对面交谈方式进行调查。结果杭州市托幼机构食堂持有效餐饮服务许可证和配备专职食品安全管理员的比例分别为95.2%和75.5%。84.5%的食堂功能分区合理,89.0%的食堂设有足够的三防设施,72.2%的食堂所有食品及原料均采购索证,水池、刀具、砧板和容器分类并专用的比例分别为83.3%、60.6%、60.6%和69.6%,且公办托幼食堂相应比例均高于民办。结论市托幼机构食堂在硬件设施和日常管理上都比较规范,但民办托幼机构食堂与公办相比还有较大差距。
Objective To understand the food safety status of kindergartens in kindergartens in Hangzhou. Methods No less than 20 kindergartens and canteens were drawn in all districts and counties. Surveys were conducted by on-site inspection and through face-to-face interviews with canteens management staff through unified training of health supervisors. Results The proportions of holders of valid food service licenses and full-time food safety administrators in kindergartens and child care institutions of Hangzhou were 95.2% and 75.5% respectively. 84.5% of the canteens are partitioned rationally, 89.0% of the canteens have enough three anti-counterfeiting facilities, 72.2% of the canteens purchase all the food and raw materials, and 83.3% are for pool, cutter, chopping board and container respectively, 60.6%, 60.6% and 69.6%, respectively, and the corresponding proportion of public nursery schools are higher than that of private ones. Conclusions City canteens institutions canteens in the hardware facilities and daily management are more standardized, but there is a big gap between the canteens for private kindergartens and the government.
