目的:研究模拟胃环境下香椿子多酚清除亚硝酸盐条件及初步动力学。方法:在单因素实验基础上选取不同因素与水平,根据中心组合实验设计,采用响应面分析法,确定影响清除率因子;对香椿子多酚与茶多酚清除动力学曲线进行数学模型拟合。结果:所得响应面优化清除条件为胃蛋白酶浓度3.75 mg/m L,反应时间107.03 min,多酚浓度0.58 mg/m L,此时清除率为93.23%;香椿子多酚与茶多酚清除动力学曲线符合Logistic模型及零级动力学方程。结论:香椿子多酚在模拟胃环境下对亚硝酸盐具有较高清除作用,为下一步开发应用香椿子多酚提供理论基础。
Objective: To study the conditions and initial kinetics of removing nitrite from Toona sinensis polyphenol in simulated gastric environment. Methods: Different factors and levels were selected on the basis of single factor experiments. According to the central composite experimental design, response surface analysis was used to determine the factors influencing the clearance rate. Mathematical model fitting was performed on the kinetic curves of clearance of polyphenols and tea polyphenols from Toona sinensis . Results: The optimized response conditions were as follows: pepsin concentration 3.75 mg / m L, reaction time 107.03 min, polyphenol concentration 0.58 mg / m L, and the clearance rate was 93.23%. The removal power of Toon Polyphenols and Tea Polyphenols The learning curve is in line with the Logistic model and the zero-order kinetic equation. CONCLUSION: Toona sinensis polyphenol has high scavenging effect on nitrite in the simulated gastric environment, which provides a theoretical basis for the further development and application of Toona sinensis polyphenol.
