目的:了解江苏省食品中7种食源性致病菌的污染情况和分布状况,为预防和控制食源性疾病提供科学依据。方法:依据《2008年度国家食源性疾病监测网工作手册》检测技术要求,对757份食品样品进行沙门菌、单增李斯特菌、副溶血性弧菌、金黄色葡萄球菌、弯曲菌、大肠杆菌O157、阪崎肠杆菌的分离鉴定。结果:757份食品样品中共检出118株致病菌,总检出率为15.59%(118/757)。7种食源性致病菌中,副溶血性弧菌检出率最高(13.46%),其次为金黄色葡萄球菌(6.95%)、单增李斯特菌(6.56%)和沙门菌(6.06%),未检出弯曲菌和大肠杆菌O157。8大类食品中,生肉和动物性水产品污染率最高,分别为32.61%和29.49%。结论:江苏省主要消费食品中存在食源性致病菌污染,生肉和动物性水产品是污染的高危食品,生肉主要被单增李斯特菌和沙门菌污染,动物性水产品主要被副溶血性弧菌污染。
Objective: To understand the contamination status and distribution of seven food-borne pathogens in food in Jiangsu Province and provide a scientific basis for the prevention and control of food-borne diseases. Methods: According to the technical requirements of “2008 National Foodborne Disease Surveillance Network Workbook”, 757 food samples were tested for Salmonella, Listeria monocytogenes, Vibrio parahaemolyticus, Staphylococcus aureus, Campylobacter, Isolation and Identification of Bacillus O157 and Enterobacter sakazakii. Results: A total of 118 pathogenic bacteria were detected in 757 food samples with a total detection rate of 15.59% (118/757). Of the 7 food-borne pathogens, Vibrio parahaemolyticus had the highest detection rate (13.46%), followed by Staphylococcus aureus (6.95%), Listeria monocytogenes (6.56%) and Salmonella (6.06% ), Campylobacter was not detected and Escherichia coli O157.8 foodstuffs, the highest rate of contamination of raw meat and animal aquatic products, respectively 32.61% and 29.49%. Conclusion: Food-borne pathogenic bacteria are the main foodstuffs consumed in Jiangsu Province. Raw meat and animal aquatic products are high-risk food contaminated. The raw meat is mainly polluted by Listeria monocytogenes and Salmonella, and the animal aquatic products are mainly hemolytic Vibrio contamination.
