甘蔗是我国南方主要制糖的原料。栽培甘蔗的目的是制糖,产糖率的高低,除了糖厂压榨、煮炼工艺处理收回率高低有关外,主要决定于原料甘蔗的蔗糖份和蔗汁重力纯度的高低。假如甘蔗蔗糖份及其纯度不高,尽管糖厂设备条件很好,工艺收回率很高,也只不过是“巧妇难为无米炊”罢了,下面从原料角度谈谈甘蔗蔗糖份和蔗汁重力纯度的经济技术指标的重要性及其关系。
