目的:探讨研究餐具消毒在餐饮服务行业的影响。方法:抽取了2014-2015年餐饮业餐具的样品6950份,依据大肠菌群的快速检测纸片法进行餐具合格性的检测,并从餐具污染、餐具消毒卫生现状及原因分析、餐具消毒方法以及餐具消毒的重要性方面进行了研究阐述。结果:抽检合格5091份,合格率为73.25%。结论:餐具消毒严重影响着餐饮业食品安全,应加大监督,增强理念,改善设施,贯彻执行,保障生命的安全。
Objective: To investigate the impact of tableware disinfection in the food service industry. Methods: A total of 6,950 samples of catering tableware were collected from 2014-2015. The conformity of tableware was tested according to the rapid detection method of coliform bacteria. From the aspects of tableware contamination, sanitary status and cause analysis of tableware, tableware disinfection method and The importance of tableware disinfection were described. Results: 5091 samples were qualified, the pass rate was 73.25%. Conclusion: Dishware disinfection seriously affect food safety in the restaurant industry, supervision should be increased, enhance the concept, improve facilities, implement and ensure the safety of life.
