目的了解大连市食品中食源性致病菌的污染状况,为食源性疾病的监测和预警提供科学依据。方法按照《全国食源性致病菌监测工作手册》的要求,对大连市区农贸市场、大型超市、宾馆酒店及个体摊贩销售点的10类食品进行沙门菌、单核细胞增生李斯特菌、大肠埃希菌O157∶H7、志贺菌、金黄色葡萄球菌、副溶血性弧菌和蜡样芽孢杆菌7种食源性致病菌进行监测分析。结果 10类共296份样品检出致病菌19株,总检出率为6.4%。其中沙门菌2株,金黄色葡萄球菌5株,副溶血性弧菌12株。结论大连市市售食品不同程度受到多种食源性致病菌的污染,水产品、鲜榨果蔬汁、即食非发酵性豆制品和熟肉制品为主要受污染食品,应加强市售食品监督管理,减少由此引起食源性疾病的发生。
Objective To understand the status of food-borne pathogens in food in Dalian and to provide a scientific basis for the monitoring and early warning of food-borne diseases. Methods According to the requirements of the National Foodborne Pathogenic Bacteria Monitoring Manual, Salmonella, Listeria monocytogenes, Listeria monocytogenes and so on were tested on 10 kinds of foodstuffs in the markets of farmers’ markets, large supermarkets, hotels and individual vendors in Dalian. Escherichia coli O157: H7, Shigella, Staphylococcus aureus, Vibrio parahaemolyticus and Bacillus cereus were tested for foodborne pathogens. Results A total of 196 pathogens were detected in 296 samples in 10 categories with a total detection rate of 6.4%. Among them, 2 were Salmonella, 5 were Staphylococcus aureus and 12 were Vibrio parahaemolyticus. Conclusion The foodstuffs marketed in Dalian are polluted by a variety of food-borne pathogens to varying degrees. Aquatic products, freshly squeezed fruits and vegetables, instant non-fermented soybeans and cooked meat products are the main contaminated foods. Management, reduce the resulting foodborne diseases.
