目的为解决滴定方法测定总糖含量存在的过程繁琐、效率低下(或费时费力)等问题,本文建立了一种基于流动注射分析仪的简便高效、高准确度和高精密度的糕点类食品总糖含量测定新方法。方法该流动注射分析法通过仪器配备的自动进样器、在线水解仪和紫外检测器等子模块自动完成总糖的含量测定。结果该方法总糖检测标准曲线:y=0.181 9x-0.113 3(r=0.999 8),线性范围为0.8 mg/L~800 mg/L,检出限为0.002 5 g/L,加标回收率为97.52%~106.50%,方法重复性精密度(RSD)为1.4%,该方法和滴定方法测定总糖含量结果差异无统计学意义(P>0.05)。结论采用流动注射分析法对批量糕点进行总糖含量测试分析,结果稳定、操作简便,可大大提高检测效率,值得推广应用。
OBJECTIVE To solve the problems of cumbersome and inefficient (or time-consuming) determination of total sugar content by titration method, this paper established a simple, efficient, high-precision and high-precision cakes based on flow injection analyzer A new method for the determination of sugar content. Methods The flow injection analysis method was used to determine the total sugar content automatically through sub-modules such as autosampler, on-line hydrolysis instrument and UV detector. Results The standard curve of total sugar in this method was as follows: y = 0.181 9x-0.113 3 (r = 0.999 8) with a linear range of 0.8 mg / L to 800 mg / L with a detection limit of 0.002 5 g / (97.52% ~ 106.50%). The reproducibility (RSD) of the method was 1.4%. There was no significant difference between the method and the titration method in determining the total sugar content (P> 0.05). Conclusion The method of flow injection analysis is used to test the total sugar content of batch cakes. The results are stable and easy to operate, which can greatly improve the detection efficiency and be worth popularizing and applying.
