2011年元宵节刚过,笔者得到一个喜讯:陕西海涛小吃中心共斥资60余万元的中式快餐店和川菜馆开业了,据了解,之后还将有一家特色冒菜坊相继开张。懒凉皮作为中式快餐店的特色小吃,即使在冬季也同样受到消费者喜爱,仅元宵节当日就卖掉500碗,很多顾客宁愿排队等,也要吃上一碗味道独特的懒凉皮。说起凉皮,全国都知晓陕西是凉皮的发源地。但是所有的凉皮多少年来都延续着一种制作工艺,其中洗面是凉皮工艺中最劳累的一个环节,在北方冬天洗面让人异常遭罪,手常常冻得发红,粗糙不堪,甚至皲裂。
