对林蛙油酶解条件进行优化,筛选适合实际生产所用的蛋白酶,分析酶解产物分子量,开发一种多肽口服液产品。结果表明,中性蛋白酶和风味蛋白酶以1∶1的比例复合酶解林蛙油,水解度最高,酶解条件为温度50℃,pH值7,加酶量4%,料水比1∶100,酶解时间4 h;通过基质辅助激光解吸电离飞行时间质谱仪分析表明,酶解液主要分子量分布在1 000~3 000 Da与5 000~7 000 Da;开发的多肽口服液性状稳定、风味良好。
