目的了解鹤壁市市区学校食堂实施量化分级管理前后学校食堂卫生状况。方法采用餐饮业卫生许可审查评分表和经常性卫生监督量化评分表,对所辖学校食堂实施量化分级管理前后的卫生状况进行评分。结果通过实施量化分级管理,食堂的卫生许可持证率由原来89.0%提高到100.0%;健康证持有率、卫生知识培训合格率均明显好于量化分级管理前(P<0.05);功能布局符合规范率差异均有统计学意义(P<0.05);食堂的基础卫生设施配备状况有了显著改善(P<0.05);餐具检测合格率由76.9%提高到80.1%。结论量化分级管理对学校食堂卫生整体水平的提高有显著成效;针对食堂在原料采购和贮存方面存在的问题,给学校食堂卫生监管再上新台阶提出了建议。
Objective To understand the health status of school canteens before and after the implementation of quantitative grading management in Hebi city school canteens. Methods Using the health permit review scale of the catering industry and the regular health supervision quantitative score table, the health status of the canteen under the jurisdiction of the school before and after the implementation of quantitative and hierarchical management were scored. Results Through the implementation of quantitative and hierarchical management, the permit rate of health permits in canteens increased from 89.0% to 100.0%, and the pass rate of health certificates and health knowledge training were significantly better than those before quantitative management (P <0.05). The functional layout (P <0.05). The condition of basic sanitation facilities in canteens has been significantly improved (P <0.05). The pass rate of tableware inspection increased from 76.9% to 80.1%. Conclusion Quantitative and hierarchical management has a significant effect on improving the overall health of school canteens. According to the existing problems in the canteen purchasing and storage of raw materials, the paper puts forward some suggestions to the health supervision of school canteens to a new level.
