The Institute of Food Science, Kyoto University, Japan, has recently succeeded in implanting soybean genes into rice so that soy protein is produced in rice. The Institute’s Professor Neishin Cheng found that soy protein is similar to gluten in rice. He uses glutenin as a carrier to implant soybean protein genes into rice, and researchers have confirmed that the genetically modified rice produces soy protein. Soy protein is rich in lysine, glutelin in this amino acid content is very small. In addition soy protein also
