温度和湿度是影响平菇品质的重要因素,在不同温、湿度条件下,测试平菇品质变化规律,0℃、相对湿度90%±5%条件下,储存4天平菇重量损失率为1.49%,且仅发生轻微褐变;20℃、相对湿度55%±5%条件下,贮存至2天失重率达到6.2%,贮存至3天失重率达到14.6%,褐变明显。鲜食平菇的维生素C含量在贮存3天后出现明显降低,且常温条件下维生素C含量下降更迅
The temperature and humidity were the important factors that affected the quality of Pleurotus ostreatus. Under the condition of different temperature and humidity, the regularity of Pleurotus ostreatus quality was tested. The weight loss rate of Pleurotus ostreatus stored at 0 ℃ and relative humidity of 90% ± 5% was 1.49% , And only slight browning occurred. Under the conditions of 20 ℃ and relative humidity of 55% ± 5%, the rate of weight loss reached 6.2% after 2 days of storage, and the rate of weight loss reached 14.6% after 3 days of storage.
