初步探讨了乳蛋白质酶水解特性,得出了最佳酶及酶解条件:乳蛋白质在pH值8、温度40℃条件下加入6000U/g胰蛋白酶,水解时间120min,乳蛋白质水解的效果最好。另外,双酶分段水解比单一胰蛋白酶的水解效果好,以木瓜蛋白酶+胰蛋白酶水解效果为佳。
The optimum conditions of enzymatic hydrolysis and enzymatic hydrolysis were discussed: milk protein was hydrolyzed at 6000 U / g trypsin at pH 8 and temperature 40 ℃ for 120 min . In addition, the double enzymatic hydrolysis is better than single trypsin hydrolysis, papain + trypsin hydrolysis is better.
