营养配餐实训课程的开发与实践研究是高职食品营养类专业课程教学改革的重点部分,对培养学生具备从事营养咨询与指导、营养配餐技能、健康管理工作的综合职业能力具有重要的现实意义。以湖南食品药品职业学院营养配餐实训课程的开发与实践为例,就实训课程的开发思路、开发原则、内容结构体系、任务驱动教学方法的应用与实施、教学效果评价等方面进行了探讨。
The research on the development and practice of nutrition catering training course is the key part of the teaching reform of higher vocational food nutrition specialty course, which is of great practical significance to cultivate students’ comprehensive professional competence in nutrition counseling and guidance, nutrition catering skill and health management . Taking the development and practice of nutrition catering training course of Hunan Food and Drug Vocational College as an example, the development train of thought, development principle, content structure system, the application and implementation of task-driven teaching method and the evaluation of teaching effect are discussed .
