目的了解餐饮业开展明厨亮灶的实施情况以及社会效果。方法采用分层随机抽样的方法,在商丘市梁园区餐饮单位和学校食堂托幼机构抽取各20家进行“明厨亮灶开展情况调查”;在全区的社区和学校随机发放200份调查问卷对明厨亮灶的主要形式、满意度、展示部位等问卷调查。结果商丘市梁园区大型餐饮单位学校食堂、幼儿园食堂透明厨房开展情况良好,中小餐饮单位开展率不高;群众对开展透明厨房工作满意度高,同时要求加大开展“软件”方面透明力度,比如餐饮企业采购的原材料的渠道、餐具消毒情况、人员管理及健康状况要求公开透明。结论开展示范店的作用,采取“先易后难、先点后面”的方式,以点带面,逐步推广;加大食品经营许可事前的服务性指导工作,通过发证、换证等时机,逐步完成餐饮单位的“明厨亮灶”建设;加大宣传力度,提高广大群众的参与意识,使餐饮服务单位的后厨成为消费者可视、可感、可知的“阳光厨房”。
