评价小麦籽粒品质,有多方面的内容和指标。从化学成分看,蛋白质和氨基酸的含量无疑是重要的内容和指标。与其它禾谷类作物相比,小麦籽粒中的蛋白质和氨基酸含量(表1)是比较丰富的(小麦籽粒的蛋白质有几千种,这里只谈总含量,不做分类)。
