以甘肃省3个产地所产籽瓜为材料,进行基本成分、氨基酸及矿质元素分析。结果表明:水分含量以瓤最高(97.32%~97.98%),内皮次之(96.64%~96.86%),外皮最低(91.47%~91.76%);灰分含量以瓤最低(0.22%~0.27%),内皮次之(0.25%~0.39%),外皮最高(0.45%~0.69%);含酸量瓤中 0.30%~0.43%,内皮 0.37%~0.69%;还原糖和总糖含量,瓤为 1.52%~3.05%,内皮 0.34%~1.42%;瓤和皮中蛋白质、纤维素和脂肪含量均分别低于0.45%,0.30%和0.025%,抗坏血酸含量为74.40~132.90mg/kg,内皮中含量普遍较高。18种氨基酸在籽瓜瓤皮中均有存在,其中必需氨基酸以缬氨酸、亮氨酸和苯丙氨酸含量较高,非必需氨基酸以谷氨酸、丝氨酸和精氨酸含量较高。在所测的14种矿质元素中,籽瓜瓤皮中常量元素以K、Ca、Mg、P、S含量较高,微量元素以Al、Fe、Zn含量较高,矿质元素含量以外皮最高,内皮次之,瓤最低。不同产地所产籽瓜的成分含量均在一定程度上存在差异。
