目的了解比较广东省两市熟肉制品的微生物污染状况,一定范围内了解各城市熟肉制品的卫生质量差异。方法对2个城市的城区及乡镇大中型超市、集贸市场、食杂店的熟肉制品进行随机抽样,所抽取样品均按国家标准进行检验。结果 A城市与B城市的检出率差异有统计学意义(χ2=5.58,0.025>P>0.01),本次抽取的样品中检出2株沙门氏致病菌,均由B城市检出;在多个销售渠道中,集贸市场检出率最高,为76.3%;而城区与乡镇的检出率差异有统计学意义(χ2=5.22,0.025>P>0.01),乡镇高于城区。结论 2市熟肉制品微生物污染严重,应加强卫生监督管理。
Objective To understand the status of microbial contamination of cooked meat products in two cities of Guangdong Province and understand the difference of sanitary quality between cooked meat products in different cities within a certain range. Methods Random samples of cooked meats in large and medium-sized supermarkets, bazaars and grocery stores of urban and township cities in two cities were randomly selected. The samples were tested according to national standards. Results There were significant differences in the detection rates of A city and B city (χ2 = 5.58,0.025> P> 0.01). Two strains of Salmonella were detected in this sample, all of which were detected in B city. Among multiple sales channels, the highest rate was found in the bazaars, accounting for 76.3%. However, there were significant differences in the detection rates of urban areas and townships (χ2 = 5.22,0.025> P> 0.01). Towns and townships were higher than urban areas. Conclusions The microbial contamination of cooked meat products in 2 cities is serious, and health supervision and management should be strengthened.
