铁是地球上最丰富的矿藏之一,也是人体内各种必需微量元素中含量最多的一种。人体内含铁总量有3~4克,仅相当于一枚小铁钉子那么重,但一旦缺乏,补充起来并不容易。为什么会缺铁据调查,我国居民人均每日铁摄入量为23.4毫克,这是营养学家每日膳食铁推荐摄入量的176.5%。可见,从总体上讲,我国居民的铁摄入量并不低。但另一方面,我国不同年龄人群均有相当比例的缺铁性贫血患者。其原因有以下几点。(1)膳食结构因素。我国居民膳食以植物性食物为主。虽然植物中铁的含量并不低,但人体对植物性食物中的无机铁的吸收率很低,平均不足5%;
