目的了解瓯海区食品中食源性致病菌的污染状况,为提高食源性疾病的预警和控制能力提供有力的技术依据。方法 2013年-2015年采集瓯海区市售食品1 713份,对沙门菌、金黄色葡萄球菌、单增李斯特菌、创伤弧菌、副溶血性弧菌、霍乱弧菌、阪崎肠杆菌、蜡样芽胞杆菌、铜绿假单胞菌9种致病菌进行监测分析。结果食源性致病菌总检出率为7.47%(128/1 713);14类食品中副溶血性弧菌检出71株,蜡样芽胞杆菌检出4株,金黄色葡萄球菌检出36株,阪崎肠杆菌检出1株,铜绿假单胞菌检出10株,创伤弧菌检出2株,霍乱弧菌检出1株,单增李斯特菌检出2株,沙门菌检出1株。结论瓯海区食品中存在不同程度食源性致病菌的污染,其中水产品及其制品、生肉类、焙烤食品、熟肉制品、餐饮食品、婴幼儿食品是主要受污染食品种类,副溶血性弧菌、蜡样芽胞杆菌、金黄色葡萄球菌、阪崎肠杆菌、铜绿假单胞菌为主要污染细菌,应加强监管力度,建立风险预警,采取干预措施,控制食源性疾病的发生。
Objective To understand the contamination status of foodborne pathogens in food in Ouhai District and provide a strong technical basis for improving the early warning and control ability of foodborne diseases. Methods A total of 1 713 commercially available foods in Ouhai District were collected from 2013 to 2015. The detection of Salmonella, Staphylococcus aureus, Listeria monocytogenes, Vibrio vulnificus, Vibrio parahaemolyticus, Vibrio cholerae, Enterobacter sakazakii , Bacillus cereus, Pseudomonas aeruginosa nine kinds of pathogenic bacteria for monitoring and analysis. Results The total detectable rate of food-borne pathogens was 7.47% (128/1 713). Among 14 foodstuffs, 71 strains were found Vibrio parahaemolyticus, 4 strains were Bacillus cereus and Staphylococcus aureus were detected 36 isolates, 1 Enterobacter sakazakii, 10 Pseudomonas aeruginosa, 2 Vibrio vulnificus, 1 Vibrio cholerae, 2 Listeria monocytogenes, One strain was detected. Conclusion There are different levels of food-borne pathogenic bacteria in food in Ouhai District. Among them, aquatic products and their products, raw meat, baked goods, cooked meat products, catering foods and baby food are the main types of contaminated food, Vibrio parahaemolyticus, Bacillus cereus, Staphylococcus aureus, Enterobacter sakazakii and Pseudomonas aeruginosa are the main pollutants. Supervision should be strengthened to establish risk warning and take intervention measures to control the occurrence of foodborne diseases .
