京东板栗以其营养丰富、香甜可口闻名于国内外,被国际市场誉为“东方珍珠”。但天然稀有的珍贵食用菌——栗蘑却鲜为人知。栗蘑又称栗子蘑,生长在深山老栗树根部的地面上,丛状、柔软、灰白色、层叠似菊,闻之清香,食之脆嫩昧美,具有独特的口味和齿感。据农业部质检中心和中国预防医学科学院检验,栗蘑中含有丰富的蛋白质,18种人体所需的氨基酸和钾、磷、铁、锌、钙、硒等多种矿物质及 B_1、C、E 等各种维生素。特别是蛋白质的含量与鸡肉、豆类相当,维生素和膳食纤维的含量高于其它品种蘑菇的3-20倍。长期食用,除增加营养外,能增强肝脏、心脏功能和肌体免疫力,可抑制肿翘、防止癌变、预防高血压、糖尿病、脑血栓等多种疾病,并能增智、减肥、黑发.使皮肤光滑红润,起到医疗保健和美容的作用。因此,栗蘑可称为富含多种营养成份有益健康的营养保健食品。栗蘑采集后可干鲜两用,便于常年保存,具有“一泡可用,永保香脆”的特点,能凉拼、热炒、蒸煮和做汤或馅,深受人们喜爱。河北省迁西县是板栗之乡,采食栗蘑有悠久的历史。但因天然生长有限,只能作为馈赠亲朋和宴请宾客的佳品。近几年,迁西北方珍贵特产资源开发公司进行人工栽培已获得成功,并通过大面积推广,长势良好,使这一传统的珍稀特产现在已畅销北京、天津、香港、日本等国内外市场。
